I’ve been travelling to Mollymook on the south coast of New South Wales, Australia since I was a little girl. We spent all of our Christmas holidays there, so I know it like the back of my hand. Why did we go there so much? Well it’s only a short drive south of Sydney but mainly because it’s exquisite. It’s a little town lined with pristine white beaches and dolphins who will happily accompany you on a swim. I beg you to scroll through the photos to see for yourself just how beautiful Mollymook is. And where to stay? Oh man do I have the best place for you. Brace yourselves for this one: @bannistershotels. Two of the penthouses in this hotel (there are 34 other rooms) are designed by the one and only Australian fashion icon Collette Dinnigan. Her fashion style has re-invisioned the interior with a sumptuous Hamptons-style feel. Not a single detail has been overlooked. In fact, I’d go so far as to say this is probably the best hotel in the southern highlands (these interiors were even featured in Vogue, it’s that good). It’s also renowned for the best restaurant in the south: Rick Stein’s. And I’m going back there in September! Whoop!
